Thanksgiving for Two
This year, I decided to make a simple but elegant Thanksgiving meal for two- because my hubby who is in law enforcement had to work on Thanksgiving day. I wanted to make the meal special, but since there were just the two of us, I didn't want to do a whole turkey. So I went the gourmet approach, and made turkey rolls stuffed with mushrooms, onions, herbs, with a bacon crust.
It looks something like this. This meal is perfect- just enough for two people with plenty of leftovers. You take the bacon as a first layer, lay the thin turkey breast meat, then place the mushroom stuffing on the very top. Then roll it up like you would a sushi roll.
This dish is really simple too- just pop it in the oven at 250 degrees for about two hours. At the last 15 minutes, crank up the temperature to 350 degrees so that the bacon crisps up, and holds everything together. When it's cooled down, cut it into sections. Looks how lovely it looks! The bacon really helps keep the turkey super moist.
Another close up of the dish. With simple sides such as garlic sage mashed potato and country gravy, sage and brown sugar glazed carrots, and made from scratch cranberry sauce, this meal is perfect for a family of two.
